Flippin Fantastic Protein Pancake

The combination of protein powder and banana is a match made in heaven when it comes to cooking up some delicious protein pancakes. These vegan pancakes are very quick and easy to make, as well as being incredibly healthy for you.

Ingredients

  • 2 overripe banana

  • 75g rolled oats

  • 2 large eggs

  • 2 tbsp milk (dairy, soya, oat or nut milks all work)

  • 1 tsp baking powder

  • pinch of cinnamon

  • 2 tbsp protein powder (whey, pea or whatever your preference)

  • coconut oil, or a flavourless oil, for frying

  • nut butter, maple syrup and berries or sliced banana to serve

Steps

  1. Add the banana, oats, eggs, milk and protein powder in a blender for 1-2 mins until smooth. Blenders are powerful enough to make this recipe without any problem. You can also use a food processor if you have one at home. If not, then use your hand mixer or whisk instead of using a machine for this job!

  2. Heat a drizzle of oil in a pan. Pour or ladle in 2-3 rounds of batter, and cook until golden brown on the bottom.

  3. Flip and cook until golden brown on the other side. Stack it up and serve with your favorite toppings!

Pancakes are a fun and delicious way to get your protein fix. They're easy and affordable to make, too! You can use any fruit in place of the banana and they'll still taste amazing.
