Super Saucy Spaghetti Bolognese

Spaghetti bolognese is a classic Italian dish that's easy to make, but it can be hard to get right. If you're looking for the perfect way to mix up your weeknight meals, try this healthy spaghetti bolognese recipe! It's packed with protein-rich meat and veggies that will keep you full until dinner time.

Ingredients

  • 1 tbsp olive oil

  • 200g/7oz lean beef mince

  • 1 onion, finely chopped

  • 4 large mushrooms, sliced

  • 1 carrot, grated

  • 2 celery sticks finely diced

  • 2 bay leaves

  • 1 400g/14oz tin tomatoes, chopped

  • 230ml/8fl oz chicken stock

  • 2 tbsp tomato purée

  • ½ tsp Worcestershire sauce

  • ½ tsp freshly ground black pepper

  • 300g/10½oz whole wheat spaghetti

  • 2 tbsp chopped fresh parsley

  • Juice and zest of ½ a lemon to serve

  • 6 tbsp grated Parmesan cheese to serve

Steps

  1. Heat the olive oil in a large saucepan over a medium heat. Saute the onions, garlic, bay leaves, carrots and celery for around 5 minutes

  2. Add the mince, stirring occasionally, until the mince is browned.

  3. Add mushrooms and carrot, cook for around one minute, then add tinned tomatoes, chicken stock, tomato purée, Worcestershire sauce and freshly ground black pepper. Stir well and bring to the boil, then reduce the heat to simmer for 15-20 minutes, until the sauce has thickened.

  4. Place the wholemeal spaghetti in a deep saucepan full of salted boiling water and cook according to packet instructions, then drain.

  5. To serve, divide the cooked spaghetti between four dishes, spoon equal portions of Bolognese sauce over each.

  6. Drizzle over the lemon juice and zest, then sprinkle it with parsley and cheese.

What makes this bolognese saucy is the chicken stock, it adds depth on the flavour but not too overpowering. The lemon juice and zest also lifts the flavor of this dish so don't forget it!

It can also be adapted to suit your needs and preferences.


  • You can add some heat and spice (or lack thereof) by adding red pepper flakes or chili flakes.

  • You could also use pork instead of beef if that would be more appealing to your palate!
